i noticed you've put eggplant as ur favourite vegetable.
interesting choice. what are some of the ways you go about preparing and cooking your eggplant..?

You can cut them up and bake them with cheese and tomato stuff on top, then eat with rice.

Eggplant is awesome, I cooked some a few days ago.
You can prepare them a number of different ways, like most vegetables.

As for taste, it's really pretty nondescript...like a mix of a cucumber and a little bit of summer squash, with a tougher skin. You probably wouldn't chop one up and eat it plain and raw. Like chicken, you basically can do anything you like with it, they taste like what they are with.

plain they are like a wet, squishy, soft, spongy, foam..really slightly sweet

Yeah, I like to cook with them because they absorb alot of flavour.
The other day I marinated them in olive oil, balsamic vinegar, salt and pepper, then grilled them with a coating of Moroccan spice.

Haha, it's pretty easy actually.
After a while you get pretty sick of eating the same old foods. Steamed vegetables get boring pretty quickly, so I had to learn ways to keep my food interesting (because I love eating).
I actually really enjoy cooking these days. I don't follow recipes though, I just make it up as I go, and borrow ideas from cooking shows etc...
I also love grocery shopping now. Especially fresh food markets, with meats, fruit, seafood, vegetables etc... Experimenting with new foods is pretty cool, I had black potatoes last night (they were actually purple inside though).
i've got a can of artichoke hearts and no idea what to do with them

if you have salmon, pasta, olives and other vegetables you could make "salmon salad"
put canned salmon, cooked pasta, chopped vegetables and artichoke hearts in a bowl and add grated carrot, chopped onion and olives to it along with whatever other vegetables you happen to have. Added balsamic vinegar or red wine vinegar if you like...
hopefully you don't hate it

The other day I turned on my frying pan with canola oil, added some chopped zucchini and eggplant and a tin of tuna. Tastes way better than you'd imagine.
