They work "every" muscle in piss amounts essentially, mostly the deltoids and traps

Pretty much the same muscles as a normal snatch, but with more emphasis on the core and certain other stabilising muscles.

They're good for stamina, endurance and stability.

I guess they are inferior for training explosive hip extension compared to dumbbell snatches/cleans?

I assume you mean barbell and not dumbbell, and yes

Considering that the load is very low in comparison to a barbell snatch, yes.

I'm assuming you're talking about the one-armed dumbbell snatch.

Think about them this way: you're still using all of your lower body, but you only get to have one arm connected to the weight. If you connect two arms, you're going to be able to pull more effectively, lift more weight overall, and hit all the primary movers that much harder. Hence, there's really no upside to the dumbbell snatch if you have a barbell at your disposal.

The only people who really push the one-armed dumbbell snatch is people who have derived their training methodology from the kettlebell crowd. You're not using a kettlebell, so what is the point of doing the movement without the implement it makes the most sense for?

With that said, the one-armed barbell snatch is a neat trick to screw around with when you bored. I wouldn't train it regularly either though.

But it's soooo much more functional, because you only use one arm!

generally one-arm oly lifts are pretty worthless

if you want the hip drive benefits and to actually get a decent workout, just do dumbell swings or something
