How is this supposed to be done, and how often? Lets say you're on a gym having a day with squats, leg press, "leg curls" (hams only) and leg extension among other leg thingys. Should you change all of 'em, or just the "smaller"/"bigger" exercises?

You should probably just stick to squat and deadlifts. then in 2-6 weeks switch to a different variation of the exercise.

You can change whatever you want. Switch up reps and sets, do a different exercise, do more or less rest, super set, drop set, pyramid, burn out, isolate, max, whatever. I recently put pull ups and chin ups on different days because my results decelerated.

Yes, like I said, you can change it however you want. You could just do a different exercise if necessary.

Well yea, but I don't see a lot of you people removing squats or deadlifts from your routine just like that :) Or maybe I haven't been paying attention, idk..

You dont have to remove the exersise completly to keep things changing. steve already said, just fuck around with the number of sets and reps, and change the rest, or change the order that you do the exersises in the workout.... just keep it interesting.

You could remove the "leg day" completely and change your routine entirely. If you're having trouble mixing up your routine then it's down to a lack of imagination or knowledge.
