I've got monkey bars in my backyard that I use for pullups, and the bars a pretty thick, so does the diamter (thickness) of a pullup bar matter at all?

no it doesnt, as long as you can get a reasonable grip its perfectly fine.

If the diameter is large enough to where it's hard to get a reasonable grip though, it would probably work out your forearms a little extra because you're struggling to keep a good grip.

I do pull ups with a support beam for my house. Its not even circular. I can't even use my thumbs while doing them.

Yeah. If it's thick enough, it works your forearms now. Kind of like doing thick-bar lifts for lifts in which your forearms have to support the bar, such as deadlifts and bent-over rows. I think, anyway.
