Default Apple Sauce?

I was looking through an old book of mine about eating healthy on the run and all that, and it has a little section of foods/ingredients you can substitute to lower fat content and calories. Most of it made lots of sense (and wow, regular ground turkey is way better than even extra lean ground beef, sweet!)

Anyway, I saw the following substitutions:

Oil ==> apple sauce
Butter ==> apple sauce

Now, this really got me thinking... huh? I mean, when I think about eating apple sauce, I am envisioning eating apple sauce right out of the jar, yummy! But that's not exactly what you do with cooking oil and butter! Is this thing saying that I can make my scrambled eggs with apple sauce instead of oil? I guess that could work, but I just fail to see how it can replace butter. Like if I am making cream puffs, which is basically boiling butter, water and flour, and adding eggs, will apple sauce do the trick too??

Umm I think it's more specific. I've had brownies that were cooked with applesauce and they tasted very good. Only one way to find out what foods won't work; try em!

If the book was specifying lower fat content, then yes applesauce has a lower fat content.

Except lowering fat content doesn't make sense, unless you're eating copious amounts of it in the first place and need to lower calories. Still need some, for your cell membrane's phospholipids.
